The short answer

  • Best overall: the Greater Goods 1100W sous vide machine. One dial, no app, a quiet motor and 5-year coverage, in the under-$100 tier.
  • Best for app control: the Anova Precision Cooker 3.0 adds WiFi connectivity, but its plastic clamp screw is the most-reported complaint.
  • Cheapest WiFi option: the INKBIRD ISV-200W heats water fast, though display failures show up in owner reports.

The best sous vide machine for most home cooks is the Greater Goods 1100W cooker: a single dial, no app and a quiet brushless motor, in the under-$100 tier. If you want smart sous vide cooking from your phone, the Anova sous vide machine adds dual-band WiFi and the INKBIRD adds an app for less.

How we picked

Each sous vide machine here went through a data-driven research process: published specifications side by side, price over the past year, and verified owner reviews for patterns. The full method is on how we research. We set aside the Breville Joule Turbo, a premium model with no controls on the body, because owners describe the device as useless when its app will not connect or is retired. Other sous vide models, including the INKBIRD ISV-100W and ISV-300W, a large NSF-certified cooker and a commercial circulator, fell short of 7.5 on early failures or accuracy complaints. Our 1-10 scores are editorial, not star ratings: 9-10 is the best you can realistically buy here, 8-9 is excellent for its use, 7.5-8 is good with a clear trade-off.

Fair price. It is at its usual price. No need to wait unless a big sale event is close. All buy-timing checks

This powerful sous vide immersion circulator pairs 1100W of power with a design for water baths up to 15 L, so sous vide cooking starts fast. You set 68-203°F in half-degree steps with a twist and a press of the dial, and a color-coded light shows heating, cooking and done. The easy-to-read display is angled toward you, so you can check the water temperature without hovering over the pot. Owners describe quick heating, quiet operation and accurate temperatures, and built-in calibration lets you check the reading against your own thermometer. There is no WiFi or Bluetooth to connect, so this sous vide model keeps its controls simple and nothing depends on an app. The plastic impeller parts are the risk: a few owners saw a piece break off, and one saw the fin-cover tabs melt on 24-hour brisket cooks at 175-184°F, so treat very long, hot cooks with care. One owner reported a water-level sensor that blocked startup.

What owners report

Among the owner reports we reviewed, satisfied owners found it accurate and easy to run from the buttons. The larger critical group described the brittle clamp screw and a few dead units.

Verdict: A capable cooker held back by a cheap clamp; worth it if you will use the app.

Fair price. It is at its usual price. No need to wait unless a big sale event is close. All buy-timing checks

This powerful Anova sous vide machine pairs 1100W of power with dual-band WiFi connectivity, so you start a cook via the two-line touch screen or the app, and the stainless steel skirt twists off for cleaning. Its adjustable clamp fits nearly any pot deep enough for the water level. Owners liked its accurate temperature control and the simple buttons, and some never installed the app, partly because it opens with an optional paid recipe-subscription prompt. The plastic clamp screw is the weak point of the design: many owners describe it breaking, and some call replacement holders pricey. It sits in the under-$200 tier.

What owners report

In the owner reports we analyzed, happy owners praised quick heat-up and tender steaks. Critical reports were mostly failed screens plus a few accuracy and WiFi problems.

Verdict: Works well while the screen lasts; check it with a separate thermometer.

Lowest price in 90 days. As of our check it is at its lowest price of the last 90 days: a strong time to buy. All buy-timing checks

The 1000W INKBIRD is a smart, app-connected sous vide machine and a budget-friendly choice: it works through a 2.4 GHz WiFi app, covers 32-194°F and stops with an alarm when water runs low. Owners cooked steaks, ribs and pork loin they called excellent and praised its quick heat-up. The display is the risk: many owners report it going partial or blank, from weeks to a year in, and one found the water 30°F off the setting, so verify the device with a separate thermometer. It sits in the under-$100 tier.

Is a sous vide cooker worth it?

Yes, if you cook protein often. A sous vide cooker is the right choice for repeatable results: a precision cooker heats the water, keeps it moving and holds the food at one precise temperature, so sous vide steak or chicken breast comes out evenly done from edge to edge. It is a poor fit for fast weeknights, because the long, low-temperature cooking process takes hours, though you can cook hands-off at home while you do something else.

How do you choose a sous vide machine?

  1. Power: a sous vide machine at 1000-1100W, as in our picks, heats the water quickly.
  2. Controls: a dial or onboard buttons work without a phone; an app adds remote monitoring, recipes and Wi-Fi or Bluetooth connectivity.
  3. Temperature range: the picks reach 194-203°F at the top end, enough for eggs through long roasts.
  4. Build: look for a sturdy clamp, a durable design and a decent warranty.
  5. Container: a deep pot works for sous vide cooking; a lidded container cuts evaporation.

Does sous vide need a vacuum?

No. A vacuum sealer removes air well, but for sous vide a zip-top bag lowered into the water works: the water pressure pushes air out before you seal it. Either way, keep the food fully submerged so the bath temperature reaches it evenly.

How do you sous vide ribeye steak?

Season it, seal it, cook it at your doneness temperature in the water bath, then dry it and sear hard. One Greater Goods owner reports a ribeye sealed in a vacuum bag for 2.5 hours at 129°F, which came out medium rare, and an INKBIRD owner cooked NY strips about 4 hours at 135°F and found them very tender. Those are doneness choices. USDA’s guidance for whole cuts of beef is 145°F with a 3-minute rest, so set the cooker there if you want to follow it.

Dry it, then sear fast

Pat the steak dry, use a very hot pan and sear 1-2 minutes per side.

Why can’t you put garlic in sous vide?

Many guides advise against raw garlic in a sealed bag at low temperatures, because low oxygen and mild heat can suit certain bacteria, and its flavor can turn harsh. Guides commonly suggest garlic powder, cooked garlic, or adding fresh garlic at the sear.

Frequently asked questions

What are the top brands of sous vide machines?

Anova, INKBIRD and Greater Goods are the brands in our picks, with Greater Goods the standout among no-app models. Breville (the Joule line) and PolyScience also make sous vide machines, but we set those models aside after owner reports of app dependence and early failures. All three picks are stick-style immersion circulators that clamp to a pot and heat the water.

Do steakhouses sous vide their steaks?

Many restaurant kitchens use sous vide for repeatable doneness and to hold food ready for service. At home you copy the method: cook in a bag, then sear.

Can I sous vide in a mason jar?

Yes, for eggs, custards and small portions, in heat-safe canning glass with the lid only finger-tight so air can escape. Keep it fully submerged. For steaks, a bag holds more.

Is sous vide full of microplastics?

The research is limited and not settled, but some people worry about plastic bags at warm temperatures. Choose bags labeled food-safe and rated for cooking, avoid heating them hotter than needed, or use heat-safe glass jars if you prefer.
